Avocado Fruit Salad


This salad is the perfect combination of summer; refreshing cold like a dip in the pool and spicy hot like the sweltering summer sun. Try this delicious salad for summertime in a dish!



Avocado Fruit Salad




For Jalapeno Dressing:

·         ½ cup sour cream (organic)
·         1 tablespoon of honey
·         1 tablespoon of lime juice
·         2 seeded jalapeno pepper (large)
·         ¼ teaspoon paprika

For Salad:

·         Bibb lettuce leaves
·         2  medium red grapefruit, peeled and sectioned (chilled)
·         medium avocado, seeded, peeled, and sliced lengthwise (chilled)
·         medium papaya, seeded, peeled, and sliced lengthwise (chilled)
·         1/2 of a  medium jicama, peeled and cut into matchstick-size pieces (chilled)
·         ½ teaspoon Chili Powder



Directions:

For Jalapeno Dressing:

1.      Combine 1/4 cup dairy sour cream, 1 tablespoon honey, 1 tablespoon lime juice, 1 or 2 finely chopped and seeded fresh jalapeno peppers, and 1/4 teaspoon paprika in a blender container.
2.      Cover and blend until nearly smooth. Transfer to a small bowl. Stir in 1/4 cup dairy sour cream until combined.

For Salad:

1. Line a platter with Bibb lettuce leaves. Arrange grapefruit sections, avocado slices, and papaya slices on lettuce. Sprinkle jicama pieces over fruits. Drizzle Jalapeno Dressing over fruit. Sprinkle Chili Powder over the top.
