Unique Holiday Cupcakes

Try this great recipe for cupcakes!! Using great Yummy Holidays products, this recipe was made by one of our staffers and is delicious. Sure to become a holiday staple!

Cream-Cheese Lavender Honey Frosted Cupcakes
with Lavender Sugar Topping

Ingredients: (For cupcakes)
•    1 cup organic cane sugar
•    ½  cup butter
•    2 eggs
•    2 teaspoons vanilla extract
•    1 cup all-purpose flour, ½ cup Amaranth flour
•    1 ¾  teaspoons baking powder
•    ½  cup milk

Ingredients: (For frosting)
•    8 oz. cream cheese,
•    1 1/2 cup powdered sugar,
•    1/3 cup honey,
•    a few drops of food coloring,
•    1 tblspn of lavender buds, and
•    sprinkle of Lavender Finishing Sugar

1.    Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan or line a muffin pan with paper liners.
2.    In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.
3.    For cupcakes, bake 20 to 25 minutes. Cupcakes are done when it springs back to the touch.

Directions (for frosting)
1.    Mix together all ingredients except Lavender finishing sugar in a bowl. Let chill in refrigerator.

When the cupcakes are done cooling, spread the delicious homemade frosting across the top.
Sprinkle with the lavender topping sugar for a instant holiday specialty!
