Happy New Holidays and New Years

Happy Holidays to Everyone! Christmas is just around the corner and seeing as how much food and people will be around, you need just as much preparation! Try this snack as a light precursor to Christmas dinner.

This appetizer idea is really great and healthy. It keeps with the season and are delicious and modern takes on the boring old traditional Christmas snacks!

Try a light salad with brain-boosting nuts, and a homemade dressing to give the rest of yourself a fresh start!

Healthy Salad
(Serves 2)

  •  1 tablespoon Extra-Virgin Olive Oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dijon mustard
  • ½ teaspoon ground black pepper
  • ½ cup chopped tomatoes
  • ½ cup chopped onion
  • ½ tablespoon chopped cilantro
  • 1 orange or 2 clemintines, zested, then peeled and sectioned
  • 2 cups leaf lettuce, torn
  • 2 tablespoons dried cranberries   
  • 2 tablespoons walnut pieces
  1. Make the dressing by whisking together the olive oil, vinegar, mustard, and Clementine zest.
  2. Put the lettuce in a large salad bowl and toss with the dressing.
  3. Sprinkle the cranberries, Clementine slices, walnuts, onion, tomatoes, and cilantro into the mix and blend well.
  4. Sprinkle pepper to taste.
