Appetizers You'll Love

Hope everyone had an amazing Halloween! Now that one great holiday is over it’s time to soldier on to the next! Thanksgiving is just around the corner and seeing as how much food and people will be around, you need just as much preparation! Feeding everyone and keeping it modern and delicious is a daunting task for any kitchen aficionado, but with a little help, pulling off a perfect and memorable dinner is completely doable. Today’s focus will be on appetizers. Just little snacks before dinner that will keep everyone’s stomach from rumbling and not spoil their appetite for the huge dinner you’ve slaved over! These appetizer ideas are really great. They keep with the season and are delicious and modern takes on the boring old traditional Thanksgiving snacks!

 

Hot Spinach and Artichoke Dip

Ingredients:
  • 1 cup thawed, chopped frozen spinach
  • 11/2 cups thawed, chopped frozen artichoke hearts
  • 6 ounces cream cheese
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1/3 cup grated Parmesan
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder

Directions:

Boil spinach and artichokes in 1 cup of water until tender and drain. Discard liquid. Heat cream cheese in microwave for 1 minute or until hot and soft. Stir in rest of ingredients and serve hot.

 

Mini Bacon Quiche

Ingredients:
  • 1 1/2 c. Bisquick baking mix
  • 1/4 c. butter, softened
  • 2 tbsp. boiling water
  • 6 slices bacon, crisply fried and crumbled
  • 1/2 c. half & half
  • 1 egg
  • 2 tbsp. thinly sliced green onion
  • 1/4 tsp. salt
  • 1/4 tsp. cayenne pepper
  • 1/2 c. shredded Swiss cheese

Directions:

Heat oven to 375 degrees. Generously grease 24 small muffin cups, 1 3/4 x 1 inch.
Mix baking mix and butter. Add boiling water; stir vigorously until soft dough forms. Press rounded teaspoonful of dough on bottom and side of each muffin cup. Divide bacon evenly among muffin cups. Beat half & half and egg; stir in onion, salt and cayenne pepper. Spoon about 1 1/2 teaspoons into each muffin cup; sprinkle cheese over tops. Bake until edges are golden brown and centers are set, about 20 minutes.
