The World's Best Banana (Chocolate Chip) Muffins

We here at Yummy Holidays can vouch for this recipe's claim as best in the world; we all tried it today at our Holiday party. And it's totally vegan! Courtesy of Sara K. Fay :

    • 1 1/2 cups of overripe bananas (4 bananas should do the trick), mashed
    • 1/3 cup soy milk
    • 1/2 cup vegetable oil
    • 2 cups flour
    • 1/3 cup eSutras Dark Agave Nectar (we substituted half of this amount with Date syrup - Yum! You can also try maple syrup.)
    • 3 teaspoons baking powder
    • 1 teaspoon salt
    • 1/2 cup Organics Vegan Chocolate Morsels (add more if you like)

Preheat your oven to 400 degrees. Mash bananas and add wet ingredients. Mix dry ingredients separately; add to wet mix. Add chocolate morsels. Don't over-mix; leave it nice and clumpy, especially when dealing with the bananas. Bake for 20 minutes (or until you check that it's cooked all the way through).
